Cortijo Flamingos is a small family owned business. We offer cookery breaks and holidays all year round – excluding summer (see our schedule for 2015/2016). Our passion for food and cooking led us to launch our own retreat in Chiclana de la Frontera. We source only fresh and sessional ingredients mostly from our own garden, fish and meat from local markets. Our groups are small usually 4 and up to 6 people.
Your host will be Chef Peter with over 15 years of experience and true passion for Spanish and Mediterranean flavours. Peter will show you how to cook classic Andalusian tapas (tortilla de camarones, calamares al andaluza, carne al toro, salmorejo etc) fish and seafood (Hurta a la Gaditana, Alubias blancas con almejas, pescadito frito etc.) and meats (rabo de toro, secreto ibérico, carrillada ibérica, chuletón a la sal gorda etc.)
The fun-filled cooking sessions are casual, informative and very hands-on. Peter’s laid-back style and gentle nature will increase your confidence in cooking and inspire your imagination.
