Pastel "Biarritz" Albás de Barbastro

HISTORIA Y TRADICION


En los finales del XIX y principios de este siglo inician su andadura como pasteleros en la Ciudad de Barbastro, calle San Ramón, los Sres.Albás bajo la denominación comercial: LA IMPERIAL. No sin dificultad alcanzan en su época un indudable prestigio en su actividad por la variedad y exquisitez de sus productos- pasteles y turrones.

No pasaría mucho tiempo, cuando hacia 1.903, ven la necesidad de "bautizar" uno de sus exquisitos productos bajo un nombre que tuviera eco en aquellas circunstancias, y nada más apropiado que basarse en la moda veraniega de aquel entonces cuando se acudía de forma selecta a lugares de la costa francesa como San Juan de Luz o BIARRITZ. Algo poco corriente para nuestra tierra, pero nombre de moda al fin. De esta forma tan simple, quedaron ligados los dos nombres : "LA IMPERIAL - BIARRITZ".

Pasan los años y van colaborando en este obrador los hijos y sucesores LEON, PILAR, JOSEFINA y ANTONIO ALBAS NOBEL, quienes cesaron en su actividad por jubilación hace varios años.

Nace entonces un afán un tanto sentimental por el mantenimiento de este dulce tan característico de la Ciudad de Barbastro, y por un grupo de "nostálgicos" se llega a un acuerdo con la familia ALBAS para no abandonar la elaboración del mencionado producto, cuya fórmula era un secreto familiar por su marcado carácter artesano. Y es tal este marcado carácter artesano que únicamente se basa la actividad de la actual LA IMPERIAL BIARRITZ S.A. en la elaboración del repetido PASTEL “BIARRITZ” ALBAS de Barbastro.

C'est à la fin du XIXè siècle et au début du XXè que, dans la ville de Barbastro (Huesca), rue San Ramón, la famille Albás met en marche son établissement pâtissier sous la dénomination commerciale de LA IMPERIAL. Non sans difficulté, ils atteingnent déjà à l'époque un grand prestige dans leur activité grâce àla variété et au caractère exquis de leurs produits: les gâteaux et les tourons.

Quelque temps après, vers 1903, ils doivent "baptiser" un de ces exquis produits sous un nom qui aurait du succès dans telles circonstances, et rien plus à propos que suivre la mode estivale de ce temps-là, quand les gens d'un certain status social séjournaient à Saint-Jean-de-Luz ou BIARRITZ. Il s'agissait, sans doute, d'un nom peu espagnol, mais une dénomination à la mode en fin. C'est de cette façon, tellement simple, que les deux noms: LA IMPERIAL - BIARRITZ, resteront liés.

Les années passent et León, Pilar, Josefina et Antonio Albás Nobel, enfants et successeurs de la famille Albás, vont travailler dans l'établissement jusqu'à sa retraite, il y a quelques ans.

Afin de sauver le gâteau de sa disparition, et pour des raisons qui ont plus à voir avec le sentimental qu'avec le commercial, un groupe de "nostalgiques" se met d'accord avec la famille Albás pour continuer l'élaboration du produit, dont la formule était un sécret familier à cause de son caractère artisanal. Et c'est, donc, dans ce caractère artisanal qui se base l'activité de production de l'actuelle IMPERIAL BIARRITZ, et de son produit le PASTEL "BIARRITZ" ALBÁS de Barbastro.

Towards the end of the century XIX and in the beginning of this century Mr and Mrs. Albás started their walking as cakers in the City of Barbastro, street San Ramón under the commercial denomination: LA IMPERIAL. No without difficulties they reached an undoubted good name in their activity because of the variety and excellence of their products-cakes and nougats.

Shortly, at 1903, they saw the necessity of “denominating” one of their excellent products under a name which aroused interest in those circumstances, and nothing more adequate that based on the summer fashion at that time when people went of exclusive way to places situated in the French coast as Saint Jean de Luz or Biarritz. Something poor current for our land but fashion name finally. In this simple way, the two names were joined: LA IMPERIAL-BIARRITZ.

Years have gone by, and the sons and sucesors continued working in this workshop LEON, PILAR, JOSEFINA AN ANTONIO ALBAS NOBEL, who left in their activity because of retirement several years ago.

Then a quite sentimental desire was born to maintain this sweet so characteristic of the City of Barbastro, and a group of nostalgic persons agreed with the family ALBAS to continue the elaboration of this product whose formulation was a familiar secret by its craft character. And it is such this craft character that the activity of the current LA IMPERIAL BIARRITZ S.A. is only based on the elaboration of the repeated PASTEL “BIARRITZ” ALBAS OF BARBASTRO.
